The Challenge - Step 1
Create a sauce recipe, to include method and
garnish, to go with Red Chilli crusted salmon steak to be served in
a stylish new Mexican branded chain restaurant, with each restaurant
seating 120 people. The menu price for the dish should be approx £10.00,
to include sauce and garnish, but no sides.
Normal high street
‘chainaurant’ GPs apply. State whether you would make your
sauce in house, at every restaurant, or look to buy it in to your specification,
choosing between either frozen, chilled or ambient.
The salmon should be
pan fried, medium to rare, with the chilli crust on one side only and
served crust up. The pink of the salmon should show through in places
and contrast well with the red chilli crust. Served on a white plate,
with sauce and garnish ‘on the side’ in true Mexican style.
The Challenge - Step 2
Using BD Foods products compile a complete
four-star hotel, banqueting menu suitable for 200 pax upwards. The menu-selling
price is to be set at a maximum of £40.00 per person.

The Rules
The deadline for the competition is 30th June 2010 and no entries will
be considered after this date. Only one entry will be accepted per person
and the competition is not open to BD Foods employees or any direct
family members. BD Foods decision is final and the competition
winner will be informed within seven days of the closing date. In the
event of there being no reply from the contact details supplied, BD Foods
reserves the right to offer the prize to a runner up. BD Foods
does not accept any responsibility for late or lost entries. Proof of
sending is not proof of receipt.
